Pork Fried Rice
- 12 oz country style pork ribs, trimmed
- 1/2 cup teriyaki marinade
- 2 tbsp vegetable oil
- 2 None eggs, lightly beaten
- 1 cup frozen mixed vegetables
- 4 cups cooked jasmine rice
- 2 tbsp soy sauce
- 2 tbsp sweet chili sauce
- None None Sliced green onions, for garnish
- Place ribs in a shallow bowl. Pour teriyaki marinade over, turning the pork to coat. Refrigerate for 30 mins.
- Heat half the oil in a large skillet on medium heat. Cook pork for 4-5 mins each side, or until cooked through. Transfer to a plate. Let stand, covered with foil, for 5 mins, then slice.
- Heat remaining oil in same skillet on high heat. Cook eggs for 1-2 mins, scrambling with a wooden spoon. Transfer to a bowl.
- Add vegetables to pan and stir-fry for 2 mins. Mix in rice and sauces, stir-frying for 2-3 mins, until heated through. Stir in egg. Serve rice topped with sliced pork and green onions.
