Beef, Vegetable And Lima Bean Soup

  1. In a large saucepan, heat oil over high heat. Brown beef for 2-3 mins. Set aside. Add leek, celery, garlic and chilies. Saute for 2-3 mins, until leek is tender. Return beef to pan along with stock and carrots. Bring to a boil, reduce heat and simmer for 10-15 mins. Add remaining vegetables and simmer for 10-15 mins, until vegetables are just tender. Add parsley and serve.
