Ginger And Lime Whoopie Pies
- 8 tbsp (1 stick) butter, softened
- 2/3 cup firmly packed light brown sugar
- 1 None egg
- 2/3 cup buttermilk
- 1/2 cup flaked coconut
- 1 1/2 cups flour
- 1/4 cup self-rising flour
- 1 tsp baking soda
- 1 tbsp ground ginger
- 1/4 tsp ground cloves
- None None FOR THE LIME BUTTERCREAM
- 7 tbsp butter, softened
- 1 tsp finely grated lime peel
- 1 cup powdered sugar
- Preheat the oven to 400u0b0F. Grease 2 baking pans with parchment paper.
- For the cookies, beat butter, brown sugar and egg in a large bowl with an electric mixer until light and fluffy. Stir in buttermilk, coconut, and combined sifted flours, baking soda and spices.
- Drop level tablespoons of mixture about 2 inches apart onto prepared pans. Tap pans lightly on the work surface to spread slightly.
- Bake for 10 mins. Cool on the pans.
- Meanwhile, for the lime buttercream, beat all ingredients in medium bowl with electric mixer until smooth. Use to sandwich cookies together.
