Ginger And Lime Whoopie Pies

  1. Preheat the oven to 400u0b0F. Grease 2 baking pans with parchment paper.
  2. For the cookies, beat butter, brown sugar and egg in a large bowl with an electric mixer until light and fluffy. Stir in buttermilk, coconut, and combined sifted flours, baking soda and spices.
  3. Drop level tablespoons of mixture about 2 inches apart onto prepared pans. Tap pans lightly on the work surface to spread slightly.
  4. Bake for 10 mins. Cool on the pans.
  5. Meanwhile, for the lime buttercream, beat all ingredients in medium bowl with electric mixer until smooth. Use to sandwich cookies together.
