Kofta Skewers With Mint Yogurt
- 2 1/4 lb ground lamb or beef
- 1 None medium onion, finely chopped
- 2 tbsp fresh parsley leaves, chopped
- 2 tbsp fresh mint leaves, chopped
- 1 tbsp ground cumin
- 1/4 tsp cayenne pepper
- 1 tsp ground turmeric
- 1 None egg white
- None None Mint Yogurt
- 3/4 cup plain yogurt
- 2 tbsp lemon juice
- 1 tbsp fresh mint leaves, chopped
- 6 pieces naan, toasted, to serve
- Combine ground meat, onion, herbs, spices and egg white. Form into 18 links around individual skewers. Cook on a preheated, oiled grill pan or grill for 4 mins per side, until browned and cooked through.
- Meanwhile, to make the mint yogurt, combine all ingredients in a small bowl. Season and chill until required.
- Serve kofta drizzled with mint yogurt on naan bread.
