Croûtes With Beef And Horseradish Cream
- 1 loaf French bread, sliced into 1/3-thick slices
- 1 lb thick beef rump steak
- 2 tbsp whole-grain mustard
- 1 tbsp olive oil
- 1/3 cup sour cream
- 1/3 cup Dijonnaise
- 3 tsp horseradish cream
- 1 oz mustard cress
- Preheat oven to 350u0b0F.
- Arrange bread in a single layer on baking trays. Bake for 5 mins per side, or until lightly toasted. Let cool.
- Season beef then coat with mustard. Heat olive oil in a large frying pan over medium-high heat. Cook beef for 3 mins per side for medium-rare, or until cooked to your liking. Cover beef and let rest for 10 mins. Cut into thin slices.
- Combine sour cream, Dijonnaise and horseradish cream in a small bowl. Spread 1 side of croutons with a little sour cream mixture. Top with a curled beef slice then a little more of sour cream mixture. Season then top with cress.
