Chinese Cabbage And Herb Salad With Beef And Tamarind Dressing

- 1 1/2 tbsp tamarind puree
- 1/2 cup brown rice syrup or maple syrup
- 2 tbsp lime juice
- 2 tbsp fish sauce
- None None FOR THE SALAD
- 1 tbsp vegetable oil
- 10 oz beef stir-fry strips
- 1/2 small Chinese cabbage, finely shredded
- 3 cups baby spinach leaves
- 1 None fresh long red chili pepper, thinly sliced
- 3/4 cup roasted peanuts, chopped coarsely
- 1/2 cup loosely packed fresh mint leaves
- 1/2 cup loosely packed fresh cilantro leaves
- For the tamarind dressing, whisk all ingredients in a small bowl until combined.
- Heat the oil in a wok on high heat. Stir-fry the beef for 3 mins or until cooked through.
- Place the beef in a large bowl with the cabbage, spinach, chili pepper, peanuts, herbs and dressing. Toss gently to combine.
