Louise'S Jam Cake
- 2 1/2 c. sugar
- 6 egg yolks, well beaten
- 1 c. butter or margarine
- 1 tsp. soda, dissolved in buttermilk
- 1 c. buttermilk
- 1 c. blackberry jam
- 1 c. golden raisins
- 1 c. strawberry preserves
- 1 c. pear or peach preserves
- 1 c. nuts, finely chopped
- 1 tsp. cloves
- 1 tsp. cinnamon
- 1 tsp. allspice
- 3 1/2 c. plain sifted flour
- 6 egg whites, stiffly beaten
- Sift flour and spices together; set aside.
- Cream butter and sugar until fluffy.
- Add egg yolks and beat thoroughly. Alternately add buttermilk/soda mixture and dry ingredients.
- Mix jams, raisins, preserves and nuts together and add to batter. Fold in the beaten egg whites.
