Whole Jerked Chicken

  1. Heat oven to 350u0b0F. In small bowl, combine scallions, vegetable oil, parsley, ginger, seasoning blend, garlic, 1 tablespoon lime juice and 1/2 tbsp lime zest.
  2. Rub half of the herb seasoning mixture under the skin of the chicken. Spread remaining herb mixture evenly over chicken. Place chicken on rack set in roasting pan. Using kitchen twine, tie together chicken legs.
  3. Roast chicken for 1 hour and 45 mins or until thermometer inserted in thigh, not touching bone, reads 170u0b0 F. Wait for 20 minutes before carving.
