Baked Salmon With Vegetable Tagliatelle
- 8 oz tagliatelle pasta
- 1 None leek, cut lengthwise into strips
- 4 None large carrots, sahved lengthwise with a potato peeler
- 2 1/2 tbsp butter
- 1 1/2 lbs salmon fillet, cut into 4 slices
- 1 cup prepared hollandaise sauce
- 1/2 cup heavy cream
- 1 oz chopped mixed herbs
- 1/4 lb cooked peeled shrimp, thawed if frozen
- 3 tbsp lime juice
- None None parsley, to garnish
- Preheat the oven to 425u0b0F. Cook the pasta according to the package instructions, adding the vegetable strips about 6 min before the end of the cooking time. Drain and rinse briefly under cold water.
- Heat the butter in a frying pan and saute the salmon for 2-3 mins. Season with salt and pepper. Arrange the vegetable pasta in a baking dish and lay the salmon on top.
- For the sauce, add the hollandaise, cream, herbs and shrimp to a saucepan and stir together over a gentle heat. Season with salt, pepper and lime juice. Pour on top of the vegetables, pasta and salmon and bake for 10-15 mins. Serve garnished with parsley.
