Lamb Sausage And Feta Bruschetta

  1. Heat 1 tsp oil in a frying pan over medium heat. Cook sausages, turning, for 10-12 mins, or until cooked through. Set aside, cover with foil and let rest for 5 mins. Slice thickly.
  2. Meanwhile, combine remaining oil, tomato, cucumber, onion, feta and oregano in a medium bowl. Season.
  3. To serve, place toast on serving plates. Top with arugula, sausage and Greek salad. Serve with lemon wedges and sprinkle with oregano leaves.
