Strawberry And Passion Fruit Crepes

  1. Sift flours into a large bowl. Stir in sugar. Whisk milk and egg in a medium bowl. Gradually whisk into flour mixture until smooth. (This may be done with a hand blender or a food processor.) Let stand for 15 mins.
  2. Spray a small nonstick skillet with no stick cooking spray. Heat on high heat.
  3. Pour 1-2 tbsp batter into the hot pan, swirling to cover bottom (pour out any excess). Cook for 1-2 mins until lightly golden. Turn to cook the other side. Transfer to a plate. Repeat with remaining batter.
  4. Serve crepes folded, topped with strawberries, passion fruit and vanilla yogurt.
