Strawberry And Passion Fruit Crepes
- 1 cup flour
- 1 cup self-rising flour
- 1 tbsp sugar
- 2 cups skim milk
- 1 None egg
- 9 oz strawberries, hulled and sliced
- 3 None passion fruits, pulp scooped out
- None None Vanilla yogurt, to serve
- Sift flours into a large bowl. Stir in sugar. Whisk milk and egg in a medium bowl. Gradually whisk into flour mixture until smooth. (This may be done with a hand blender or a food processor.) Let stand for 15 mins.
- Spray a small nonstick skillet with no stick cooking spray. Heat on high heat.
- Pour 1-2 tbsp batter into the hot pan, swirling to cover bottom (pour out any excess). Cook for 1-2 mins until lightly golden. Turn to cook the other side. Transfer to a plate. Repeat with remaining batter.
- Serve crepes folded, topped with strawberries, passion fruit and vanilla yogurt.
