Tofu And Vegetable Stir-Fry
- 2 tbsp vegetable oil
- 1 clove garlic, finely sliced
- 3/4 inch fresh ginger, peeled, finely sliced
- 1 bunch baby carrots, trimmed, halved lengthwise
- 1 head broccoli, cut into small florets
- 11.25 oz marinated tofu pieces
- 1/3 cup vegetable stock or water
- 2 tbsp sweet soy sauce
- 1 tbsp light soy sauce
- 2 None spring onions, sliced
- 1/3 cup roasted peanuts, roughly chopped
- None None cooked brown rice, to serve
- None None lime wedges, to serve
- Heat oil in a wok or large frying pan over high heat. Stir-fry garlic and ginger for 20 seconds, or until golden. Add vegetables and tofu. Stir-fry for 1-2 mins. Add stock, sweet soy sauce and light soy sauce. Simmer for 1-2 mins, or until vegetables are just tender. Remove from heat. Add spring onions. Sprinkle with nuts and serve with brown rice and lime wedges.
