Grilled Steak And Chorizo Tacos
- 1 lb skirt steak
- 1 None lemon, juiced
- 1/2 tsp garlic powder
- 2 None cured chorizo sausages
- 1 tbsp olive oil
- 8 None corn tortillas, warmed
- 4 oz feta cheese
- None None FOR THE SALSA
- 1 None red onion, finely chopped
- 2 None long green chili peppers, seeded and chopped
- 4 None tomatoes, seeded and chopped
- 1 clove garlic, crushed
- 1 None avocado, seeded, peeled and chopped
- 1/3 cup cilantro leaves
- 1 None lime, juiced, plus additional halves, to serve
- Combine steak, lemon juice and garlic powder in a shallow dish. Mix well. Marinate for 10 mins.
- Remove skins from chorizo; coarsely chop. Place in a food processor and pulse until large crumbs form. Heat oil in a medium skillet on high heat. Cook chorizo for 3-4 mins, stirring, until golden and crisp.
- Meanwhile, for the the salsa, heat a large, dry skillet on high heat. Cook onion and chili peppers for 3-4 mins, stirring occasionally, until lightly charred. Add tomatoes and garlic. Cook 1-2 mins, until tomatoes soften. Transfer to a bowl. Cool. Add avocado, cilantro and lime juice. Season to taste. Toss to combine.
- Heat a grill pan on high heat or preheat the grill to medium-high. Cook steak for 2-3 mins each side for medium-rare. Let stand, loosely covered with foil, 5 mins, then slice thinly.
- Top each warm tortilla with chorizo, steak strips and salsa. Crumble feta over the top. Serve with lime halves.
