Lamb Meatball Wraps
- 9 oz ground lamb
- 1 None small carrot, coarsely grated
- 1/4 cup dried breadcrumbs
- 2 tbsp parsley, chopped
- 1 None large egg, lightly beaten
- 1 tbsp tomato sauce
- 4 None flatbreads
- 2/3 cup hummus
- 5 oz lettuce, shredded
- 1 None small red pepper, deseeded, thinly sliced
- 4.25 oz cheddar, grated
- Preheat oven to 350u0b0F. Line a baking sheet with parchment paper.
- In a bowl, combine meat, carrot, breadcrumbs, parsley, egg and tomato sauce. Season to taste.
- Mold tablespoonfuls of meat mixture into balls. Place on prepared baking sheet. Bake for 15-20 mins, until golden and cooked through. Drain on paper towels.
- Spread flatbreads with hummus. Top with lettuce, pepper, cheese and halved meatballs. Wrap in plastic wrap and chill until ready to serve.
