Lemongrass Beef And Noodles

  1. Combine lime juice, soy sauce, fish sauce and brown sugar. Set aside.
  2. Heat a wok or large frying pan over high heat. Lightly coat with oil. Working in batches, stir-fry beef for 2-3 mins, until browned. Set aside. Add chili and lemongrass. Stir-fry for 1 min. Add choy sum stalks and 2 tbsp water. Stir-fry for 1-2 mins. Add noodles, beef, sauce and choy sum leaves. Stir-fry for 2 mins, until coated. Sprinkle with chopped peanuts and serve with lime halves.
