Cherry And Nut Coffee Cake

  1. Preheat the oven to 325u0b0F. Using a hand-held mixer, whip together the eggs with the vanilla and sugar until thick and creamy. Beat in the the buttermilk and orange zest, then stir in the flour, baking powder, and pudding powder.
  2. Fold in the hazelnuts and cherries then spread the mixture out in a 10 1/2-by-15 1/2-inch jelly roll pan, lined with parchment. Bake for about 30 mins. Leave to cool for a few mins in the pan.
  3. Spread the cream over the top while the cake is still warm; then cool completely. To serve, sprinkle with confectioners' sugar and nuts.
