Spicy Chicken Fillet With Honey Beer Reduction And Vegetables

  1. Combine beer, soy sauce, cayenne, mustard and honey. Heat 1 tsp oil in a saucepan and saute shallots for 1-2 mins. Add beer mixture and cook over low heat until syrupy. Season.
  2. Meanwhile, heat remaining oil in a pan and saute chicken breasts over medium heat, turning as necessary, for about 10 mins. Cook beans in boiling salted water for about 6 mins, add carrots and cook for another 4 mins. Drain, toss in butter and season to taste.
  3. Pour a little beer reduction over chicken then slice and serve with vegetables. Sprinkle with parsley and serve remaining reduction on the side.
