Sweet And Sour Pork
- 2 (10.5 oz) pork fillets, sliced 1/3 inch thick
- 1/3 cup cornstarch
- 1/4 cup vegetable oil, plus 2 tbsp
- 1 tsp finely grated ginger
- 1 clove garlic, finely chopped
- 1 None onion, cut into wedges
- 1/2 None red pepper, sliced
- 1/2 None green pepper, sliced
- 1 None small carrot, cut into batons
- 1/4 None fresh pineapple, cut into chunks
- 1 None medium cucumber, seeds removed, cut into batons
- None None For the Sauce
- 2 tbsp tomato sauce
- 1 tbsp malt vinegar
- 1 tbsp soy sauce
- 1 tbsp brown sugar
- 1 tbsp shaoxing wine
- 2 tsp cornstarch, mixed with 2 tbsp water
- None None steamed or boiled rice, to serve
- Dredge pork in cornstarch, shaking off excess. Heat 1/4 cup vegetable oil in a wok over medium-high heat. Stir-fry pork in batches until crispy. Set aside.
- Wipe wok clean. Add remaining vegetable oil and cook ginger, garlic and onion for 1 min. Add peppers and carrot. Stir-fry for 3-4 mins. Return pork to pan along with remaining ingredients and stir-fry vegetables are heated through. Whisk together sauce ingredients then add to pan and cook until sauce thickens.
- Serve stir-fry with steamed or boiled rice.
