Sweet And Sour Pork

  1. Dredge pork in cornstarch, shaking off excess. Heat 1/4 cup vegetable oil in a wok over medium-high heat. Stir-fry pork in batches until crispy. Set aside.
  2. Wipe wok clean. Add remaining vegetable oil and cook ginger, garlic and onion for 1 min. Add peppers and carrot. Stir-fry for 3-4 mins. Return pork to pan along with remaining ingredients and stir-fry vegetables are heated through. Whisk together sauce ingredients then add to pan and cook until sauce thickens.
  3. Serve stir-fry with steamed or boiled rice.
