Sweet Potato Casserole With Sausage

  1. Preheat oven to 350u0b0.
  2. Grease a 9 x 13-inch baking dish and set aside.
  3. Peel and cut up sweet potatoes; cook in boiling water until soft.
  4. Strips casings off of sausage and discard.
  5. Crumble sausage into a frying pan and saute until done.
  6. Drain, reserving some drippings.
  7. Saute mushrooms and onion in 2 tablespoons of drippings.
  8. Cut apples into thin slices about the size of potato chips; set aside.
  9. When sweet potatoes are cooked, mash them and add butter, salt and pepper.
