Gai Lan With Oyster Sauce

  1. Place oil and garlic in a wok over medium heat. Once oil starts to sizzle, stir garlic constantly for 2 mins, or until golden brown. Remove garlic immediately with a slotted spoon and drain on paper towels. Remove wok from heat. Reserve 1 1/2 tbsp oil in wok.
  2. Blanch gai lan stems in boiling water for 1 min. Add gai lan leaves and cook for 30 seconds, or until leaves and stems are almost tender. Drain.
  3. Heat reserved oil in wok over high heat. Add gai lan, oyster sauce and soy sauce. Stir-fry for 2 mins, or until heated through. Serve topped with fried garlic and chili.
