Glazed Ham With Mango And Chili Salsa
- 1 (18 lb) cooked leg of ham, rind removed, fat scored in a diamond pattern
- 1 cup mango chutney
- 2 tbsp brown sugar
- 14 None fresh long red chilies
- -1 None Mango and Chili Salsa
- 2 None medium mangoes, chopped coarsely
- 2 tbsp mango chutney
- 1/2 None small red onion, chopped finely
- 1 tbsp lime juice
- Preheat oven to 350u0b0F. Place ham on an oiled wire rack set inside of a large roasting pan.
- For the glaze, stir chutney, sugar and 1/4 cup water in a small saucepan over low heat until sugar is dissolved. Brush glaze over ham and cover shank end with foil. Add 2 1/4 cups water to roasting pan. Roast for 50 mins, brushing occasionally with glaze. Sprinkle chilies around ham in roasting pan. Roast for another 30 mins, or until chilies are browned lightly and tender.
- To make the mango and chili salsa, deseed and chop 4 of the baked chilies. Combine chopped chilies in a medium bowl with mango, chutney, onion and lime juice.
- Slice some of the remaining baked chilies coarsely. Sprinkle over ham.
- Serve ham with salsa and remaining baked chilies.
