Taramasalata
- 4 slices stale white bread, crusts removed
- 4 oz cod roe
- 1/2 None onion, coarsely chopped
- 1 clove garlic, crushed
- 1/4 cup lemon juice
- 2/3 cup olive oil
- Soak bread in a bowl of cold water for 2 mins. Squeeze dry and place most of it in food processor bowl. Add roe, onion and garlic and process to a puree, scraping down sides when necessary.
- Add most of lemon juice and process briefly. With motor running, pour in oil through feed tube.
- Taste taramasalata, if too strong in flavor, add remaining squeezed bread and process until smooth. Taste again and add remaining lemon juice if necessary. Add a little cold water if too thick. Add pepper to taste, process again until smooth with a thick, creamy consistency.
- Transfer to a container; cover and refrigerate. Serve with pita bread.
