Nasi Goreng With Eggs
- 1 tsp sesame oil
- 1 tbsp peanut oil
- 1 medium onion, finely chopped
- 3 cloves garlic, crushed
- 1 piece (2 inches) ginger, grated
- 1 tbsp sambal oelek (or other chili sauce)
- 7 oz boneless skinless chicken thighs, cubed
- 1 1/3 lbs large shrimp, peeled, deveined and coarsely chopped
- 3 cups cooked long-grain white rice
- 2 cups finely shredded Chinese cabbage
- 1 cup bean sprouts
- 4 None green onions, thinly sliced
- 1 tbsp kecap manis (or sweet soy sauce)
- 4 None eggs
- Heat sesame oil and half the peanut oil in wok on high heat. Stir-fry onion, garlic, ginger and sambal oelek until onion has softened.
- Add chicken; stir-fry until browned. Add shrimp; stir-fry until shrimp change color. Add rice, cabbage, bean sprouts, green onions and kecap manis; stir-fry until heated through. Season to taste.
- Meanwhile, heat remaining peanut oil in large skillet on medium heat. Fry eggs until just set. Serve nasi goreng topped with eggs.
