Apple And Raisin Jar Cake
- 2 cups all-purpose flour
- 3 tsp baking powder
- 1 tsp ground cinnamon
- 2/3 cup sugar
- 1 None medium egg
- 1 cup reduced-fat milk
- 1/3 cup oil
- 1 None small apple, shredded and excess juice squeezed out
- 3 tbsp raisins
- Preheat the oven to 325u0b0F. In a bowl, mix together the flour, baking powder, cinnamon and sugar. In a separate bowl, whisk together the egg, milk and oil, then add the flour mixture and stir in the apple pulp and raisins. Divide the mixture between 6 small, greased, oven-proof jars with airtight sealable lids, with about 1 1/4 cup capacity. Bake in the center of the oven for about 35 minutes, until an inserted knife comes out clean.
- Place the lids in boiling water for 2 minutes to sterilize, then drain on a kitchen towel. Remove the cakes from the oven and seal immediately with the sterilized lids. The cakes should keep, unopened, for about 2 weeks.
