Ham And Asparagus Salad
- 3/4 cup long grain rice
- 1 can (11 oz) canned mandarin oranges, drained (juice reserved)
- 2/3 cup full-fat yogurt
- 4 tbsp mayonnaise
- 2 tbsp lemon juice
- Pinch None curry powder
- 1 lb white asparagus, woody ends removed and cut into thirds
- 1 tbsp sugar
- 1 lb green asparagus, woody ends removed and cut into thirds
- 2 tbsp sunflower oil
- 1 lb thick-cut ham or ham steak, cut into 1/2-inch pieces
- 1 None onion, chopped
- 1/2 bunch watercress or arugula
- Cook the rice according to the package instructions. To make the dressing, mix 6 tbsp of the reserved mandarin juice with the yogurt, mayonnaise, lemon juice and a little curry powder to taste.
- In boiling water seasoned with the sugar, boil the white asparagus for 10-15 mins, depending on the thickness. Add the green asparagus 5 mins before the end of the cooking time.
- Heat the oil in a frying pan and cook the meat for about 5 mins, turning. Add the onions after about 3 mins. Carefully stir in the mandarin segments and toss gently in a bowl with all the other prepared ingredients. Divide watercress or arugula between four plates. Spoon ham and asparagus salad over the greens and serve.
