Asian Duck Breasts
- 5 tbsp soy sauce
- 2 tsp runny honey
- 2 None duck breasts (375-400g each)
- 3 None spring onions, sliced into diagonal rings
- 100 g bean sprouts, washed and shaken dry
- 100 g salted peanuts, dry roasted in a pan
- 1 ripe mango, peeled and cut into slices
- 1 None lime, juiced
- 2 tbsp Asian fish sauce
- 2 tbsp oil
- Preheat the oven to 350u0b0F. Mix together 1 tsp honey and 1 tbsp soy sauce. Season the duck then place skin side down in a cold pan. Place the pan over medium heat for about 5 mins. Turn the duck over and saute for 1-2 mins. Brush the duck breasts on both sides with the soy sauce and honey mixture and place in the oven. Cook for about 12 mins. Remove from the oven, cover with aluminum foil and let rest 10 mins.
- Meanwhile, bring the lime juice, fish sauce, oil and the remaining soy sauce and honey to a boil then remove from the heat. Add the spring onions and peanuts.
- Cut the duck breast into thin slices. Serve on a bed of mango and bean sprouts. Add the spring onion sauce and serve with noodles or rice.
