Spicy Chickpea And Herb Salad

  1. Heat the olive oil in a pan. Add the fennels seeds, onions and garlic and saute for 3-4 mins, stirring. Mix in the chickpeas, canned tomatoes, cayenne pepper, cinnamon and sugar and season with salt. Bring to a boil and simmer for 10-12 more mins.
  2. Remove from the heat and set aside to cool for 5-10 mins. Fold in the parsley and mint then transfer to a serving bowl. Serve with flatbread.
