Christmas Stollen

  1. Scald milk.
  2. Add sugar, salt and butter; cool to lukewarm. Mix yeast with 1 tablespoon sugar; add to lukewarm milk.
  3. Stir. Add eggs.
  4. Add 3 cups of flour; beat well.
  5. Add the cardamom, raisins and citron.
  6. Add rest of flour until smooth and satiny. Place in warm place for 1 1/2 to 2 hours.
  7. Divide dough into 1/3 for each Stollen.
  8. Roll each part to an 8 x 10-inch oval.
  9. Press center; fold over.
  10. Let rise 45 minutes, until doubled.
  11. Bake at 350u0b0 for about 30 minutes.
