Enchiladas With Beef Sausage
- 2 cups plain tomato sauce
- 8 None skinless beef sausages
- None None cooking oil spray
- 8 None flour tortillas
- 2 tbsp basil paste
- 1/3 cup grated chedder cheese
- 1 None avocado, finely chopped
- 2 tsp lemon juice
- 4 oz small plum tomatoes, quartered
- None None light sour cream, cilantro leaves, to serve
- Preheat oven to 350u0b0F. Grease a 10 x 6 inch rectangular ovenproof dish.
- Spread 1/3 cup of tomato sauce over the base of the prepared dish. Spray sausages with oil. Heat a large pan over moderate heat. Cook sausages, turning, 3 minutes, or until browned; cool slightly.
- For each enchilada, place a tortilla on a flat work surface. Spread thinly with a little basil paste. Top with a sausage and roll up to enclose.
- Place enchiladas, seam-side down, in the tomato sauce in the prepared dish. Repeat with remaining tortillas, paste and sausages. Pour remaining tomato sauce over enchiladas and sprinkle with cheese. Bake 15 minutes, or until golden brown and bubbling.
- Combine avocado, lemon juice and tomatoes in a bowl and spoon over enchiladas. Serve topped with sour cream and cilantro leaves.
