Red Curry Fried Rice
- 1/3 cup vegetable oil
- 7 oz green beans, trimmed, cut into 2 inch lengths
- 2 None large onions, chopped
- 2 cloves garlic, chopped
- 1 tbsp Thai red curry paste
- 1 lb cooked shrimp, peeled, deveined, tails intact
- 3 None large eggs, lightly beaten
- 2 cups rice, steamed, cooled
- 6 sprigs cilantro
- 1 tbsp fish sauce
- Heat oil in a large wok on high. Add green beans, onions and garlic and stir-fry for 2 mins, until garlic is colored but not browned. Add curry paste and stir well to mix through.
- Add shrimp. Push all ingredients to sides of wok to make a well in center of mixture. Add eggs and cook, stirring, for 2 mins, until set.
- Add rice to wok and stir-fry for 2 mins, until heated through. Add cilantro and fish sauce and stir-fry for 1 min. Serve.
