Coriander Chicken With Baby Vegetables

  1. Heat 2 tbsp oil over high heat. Sear chicken for 8-10 mins, until browned. Set aside. Add remaining oil. Cook onions for 2-3 mins. Add garlic, coriander and flour. Cook for 1 min. Add honey, lemon zest, lemon juice and stock. Bring to a boil then return chicken to pan. Cover and simmer for 20 mins. Add zucchini and carrots. Simmer for 15 mins.
  2. Fold in cilantro. Serve hot with couscous.
