Coriander Chicken With Baby Vegetables
- 3 tbsp olive oil
- 4 (6 oz) chicken breasts, skin removed
- 6 oz baby onions, halved
- 2 cloves garlic, minced
- 1 tbsp ground coriander
- 2 tbsp all-purpose flour
- 2 tbsp honey
- 1 None lemon, zested and juiced
- 2 cups chicken stock
- 6 oz baby zucchini, halved
- 6 oz baby carrots, trimmed, halved
- 3 tbsp fresh cilantro, chopped
- None None couscous dusted with paprika, to serve
- Heat 2 tbsp oil over high heat. Sear chicken for 8-10 mins, until browned. Set aside. Add remaining oil. Cook onions for 2-3 mins. Add garlic, coriander and flour. Cook for 1 min. Add honey, lemon zest, lemon juice and stock. Bring to a boil then return chicken to pan. Cover and simmer for 20 mins. Add zucchini and carrots. Simmer for 15 mins.
- Fold in cilantro. Serve hot with couscous.
