Sour Cream Streusel Cake

  1. Preheat the oven to 350u0b0F. Grease and line an 8-inch square baking pan with parchment paper, extending the paper at 2 opposite sides for handles.
  2. For the streusel topping, combine all ingredients in a bowl with a fork until crumbly. Set aside.
  3. For the cake, beat butter and sugar in an large bowl with an electric mixer until pale and creamy. Beat in eggs, one at a time, until well combined. Add sour cream and vanilla extract and beat on low speed until just combined.
  4. Sift flour, baking powder, baking soda and salt into a large bowl. Fold into batter. Spoon into prepared pan. Sprinkle with streusel topping.
  5. Bake for 1 hour until toothpick inserted into center comes out clean. Cool in pan 10 mins. Remove from pan; cool completely on wire rack.
