Pear And Almond Cake
- 2 None pears, peeled, cored, each cut into eight slices
- 2 tbsp maple syrup
- 1 1/2 cups ground almonds
- 1/2 cup self-raising flour
- 4 None eggs
- 3/4 cup packed brown sugar
- 1 tsp vanilla extract
- 12 tbsp (1 1/2 sticks) butter, melted and cooled
- None None Powdered sugar, for dusting
- Preheat the oven to 350u0b0F. Lightly grease and line bottom of a 9-inch round cake pan with parchment paper.
- Arrange pear slices evenly in bottom of pan. Drizzle with maple syrup. Set aside.
- Combine ground almonds and flour in a large bowl. Whisk eggs, brown sugar and vanilla in a medium bowl. Mix in butter. Add to almond mixture and lightly fold together. Pour over pears in pan.
- Bake 1 hour, or until toothpick inserted into center comes out clean. Cool in pan 10 mins. Invert onto wire rack; cool completely. Dust with powdered sugar.
