Marie'S Cordon Bleu Casserole
- 2 c. cubed chicken breast, cooked
- 1 to 2 c. cubed ham
- 2 to 3 c. cooked Minute rice
- 1 stick butter
- 1 can mushroom soup, thinned with 1 can water
- 1 can mushrooms (not drained)
- 1 (8 oz.) carton sour cream
- 8 oz. shredded Mozzarella cheese
- salt and pepper to taste
- parsley (optional)
- In a large pan, melt butter over low heat (do not brown). Stir in mushroom soup/water mixture and mushrooms; heat until very warm.
- Stir in gently the sour cream and heat (do not boil).
- Stir in rice, ham and chicken.
- Simmer gently.
- (If mixture seems too thick, add water.)
- Add cheese; combine all and heat until cheese melts.
- Salt and pepper to taste.
- Sprinkle with parsley for decoration.
- Dot with butter and thin with water to reheat leftovers in microwave.
