Caramel Apple Cake

  1. Preheat oven to 400u0b0F. Grease a 10 inch springform pan. Caramelize 2/3 cup sugar in a frying pan until golden. Remove from heat and add 1 tbsp butter, until melted. Spread evenly over base of prepared pan and top with chopped apples. Set aside.
  2. Meanwhile, cream remaining butter, remaining sugar, lemon zest and 1 pinch of salt. Whisk in eggs, 1 at a time. Sift flour and baking powder together and mix into batter, alternately with apple schnapps and sour cream. Pour over apples, smooth surface and bake for 30-40 mins. Allow to cool for 15 mins then transfer to a serving plate. Sprinkle with almonds.
