Pork Chop And Vegetable Gratin
- 300 g potatoes, peeled and cut into wedges
- 2 tbsp olive oil
- 4 x 150 g pork chops
- 150 g onions, peeled and finely chopped
- 350 g button mushrooms
- 1 tbsp flour
- 100 ml vegetable stock
- 200 g whipping cream
- 1/2-1 tsp lemon juice
- 200 g broccoli florets
- 75 g cheddar cheese, grated
- Cook the potatoes in boiling salted water for 10 mins. Drain and set aside.
- Meanwhile, heat half the oil in a large frying pan. Working in batches, add the pork chops and cook for 5 mins each side until cooked through. Remove from the pan and set aside.
- Add the onion and mushrooms and saute for 3-5 mins until the onion is golden. Remove and set aside.
- Preheat the oven 400u0b0F. Heat the remaining oil in a saucepan, add the flour and cook briefly, stirring. Gradually add the stock and the cream, stirring constantly. Bring to a boil and cook for 8 mins over medium heat. Stir in the lemon juice and season to taste. Set aside.
- Cook the broccoli in boiling salted water for 4 mins until tender. Drain and rinse under cold water. Arrange in a baking dish with the pork chops, potatoes, onion and mushroom mixture and the cherry tomatoes. Pour over the sauce and sprinkle with cheese. Bake for 15 mins.
