Citrus Soufflé
- 2 1/2 tbsp butter
- 1/3 cup granulated sugar
- 1 None lime, zested
- 1/2 None lemon, zested
- 2 tbsp all-purpose flour
- 1 tbsp orange juice
- 1 cup milk
- 2 None eggs, separated + 2 egg whites
- None None powdered sugar, for dusting
- None None mixed citrus zest strips, to decorate
- Preheat oven to 375u0b0F. Lightly grease 4 - 8.5 oz ramekins.
- Cream butter, sugar and citrus zest until light and fluffy. Add flour and orange juice. Scald milk then whisk in. Transfer mixture to a saucepan and heat until thickened. Beat in yolks then allow to cool slightly. (Can be prepared to this stage and set aside.)
- When ready to serve, whip egg whites to soft peaks. Fold into citrus mixture then transfer to prepared dishes. Bake for 15-20 mins, until puffed and golden. Dust with powdered sugar and top with citrus zest. Serve immediately.
