Fig Cookies
- 2 1/3 cups dried figs, chopped
- 1 cup raisins
- 2/3 cup pecans
- 1/4 cup honey
- 1 None lemon, zested and juiced

- 1/2 cup butter, chopped
- 1/2 cup granulated sugar
- 1 tsp vanilla extract
- 1 None egg
- 1/2 cup all-purpose flour
- 2/3 cup cornstarch
- 1 tsp baking powder
- 1 tbsp milk
- None None powdered sugar, for dusting
- In a food processor, combine figs, raisins, pecans, honey, lemon zest and lemon juice. Process with 1 tbsp water to make a spreadable consistency. Set aside.
- Cream butter, sugar and vanilla together until light and fluffy. Beat in egg. Sift together flour, cornstarch and baking powder then fold in along with enough milk to form a soft dough. Wrap in plastic wrap. Chill for 30 mins.
- Preheat oven to 350u0b0F. Lightly grease and line a 7x11 inch rimmed baking pan with parchment paper. Roll out 1/2 the dough and use to line prepared pan. Fill baking pan with filling. Roll out remaining dough and press over filling. Bake for 30-35 mins, until golden. Let cool in pan.
- Cut into squares. Serve dusted with powdered sugar.
