Curried Meatball Soup
- 1 lb ground beef
- 2 oz long grain rice, washed, drained
- 2 cloves garlic, minced
- 1/4 tsp ground cumin
- 1 None onion, finely chopped
- 1 tbsp olive oil
- 1 tbsp curry powder
- 1/2 tsp cayenne powder
- 1 lb zucchini, sliced
- 2 (13.5 oz) cans chickpeas, rinsed
- 3.5 oz baby spinach
- Combine ground beef, rice, garlic and cumin. Season. Shape into small meatballs. Chill for 10 mins.
- Meanwhile, bring onion, olive oil, spices and 4 cups water to a boil. Add meatballs, reduce heat and simmer, covered, for 20 mins. Add zucchini and cook for 10 mins, until meatballs are cooked through and zucchini is tender. Add chickpeas and spinach. Simmer, uncovered, for 2 mins, until heated through.
