Pasta With Caramelized Onions, Bacon And Thyme
- 8 oz bacon, chopped
- 2 cups button mushrooms, thinly sliced
- 3 None medium red onions, thinly sliced
- 3 cloves garlic, crushed
- 1 tbsp fresh thyme leaves
- 14 oz pasta twists
- 3 oz goat cheese, crumbled
- Cook bacon pieces in a large non-stick frying pan until crisp. Remove from pan and drain on paper towels.
- Add mushrooms to same pan and cook for 5 mins, or until softened. Remove from pan.
- Add onions, garlic and half the thyme to same pan and cook for 15 mins, or until soft and lightly browned.
- Meanwhile, cook the pasta in a large pot of boiling salted water until just tender. Drain, reserving 1/2 cup of cooking water.
- Toss the pasta with the cooking water, onion mixture and two-thirds each of the bacon, mushrooms and cheese. Season to taste with salt and black pepper.
- Serve pasta sprinkled with remaining bacon, mushrooms, cheese and thyme.
