Corn Chowder
- 8 slices prosciutto
- 2 tbsp butter
- 1 None onion, thinly sliced
- 4 cups fresh or frozen corn kernels
- 2 tbsp flour
- 3 1/2 cups milk
- 1 cup chicken stock
- 1/4 cup loosely packed micro herbs
- Finely chop 5 slices of the prosciutto.
- Melt butter in a medium saucepan on medium heat. Cook chopped prosciutto, stirring, until crisp. Add onion and corn; cook, stirring, until just tender. Add flour; cook, stirring, 1 min.
- Gradually stir in milk and stock. Stir until mixture boils and thickens slightly. Reduce heat to low; simmer, covered, about 20 mins or until corn is tender. Season to taste.
- Meanwhile, preheat the broiler on high. Place remaining prosciutto on a foil-lined baking pan. Broil about 1 min or until crisp. Cool slightly and break into pieces.
- Serve chowder topped with crispy prosciutto pieces and micro herbs.
