Corn Chowder

  1. Finely chop 5 slices of the prosciutto.
  2. Melt butter in a medium saucepan on medium heat. Cook chopped prosciutto, stirring, until crisp. Add onion and corn; cook, stirring, until just tender. Add flour; cook, stirring, 1 min.
  3. Gradually stir in milk and stock. Stir until mixture boils and thickens slightly. Reduce heat to low; simmer, covered, about 20 mins or until corn is tender. Season to taste.
  4. Meanwhile, preheat the broiler on high. Place remaining prosciutto on a foil-lined baking pan. Broil about 1 min or until crisp. Cool slightly and break into pieces.
  5. Serve chowder topped with crispy prosciutto pieces and micro herbs.
