Beef With Ramen And Mushrooms
- 8 None dried shiitake mushrooms
- 2 tbsp peanut oil
- 1 lb beef strips
- 4 None green onions, thinly sliced
- 2 cloves garlic, crushed
- 1 piece (1/2 inch) ginger, grated
- 4 cups beef stock
- 1 tbsp light soy sauce
- 2 tbsp rice wine
- 6 oz fresh ramen noodles or other fresh Asian noodles
- Place mushrooms in small heatproof bowl; cover with boiling water. Let stand 20 mins; drain. Discard stems; slice caps thinly.
- Heat half the oil in a large saucepan on high heat. Cook beef, in batches, until browned all over. Remove from pan.
- Heat remaining oil in same pan. Cook half the onion with garlic and ginger, stirring, until onion softens. Add stock, 3 cups water, soy sauce and wine; bring to a boil.
- Add mushrooms, beef and noodles; bring to a boil. Reduce heat to low; simmer, uncovered, about 5 mins or until noodles are tender.
- Divide soup among serving bowls; sprinkle with remaining onion.
