Easy Lasagna

  1. Preheat oven to 400u0b0F. Lightly coat a 10x6 inch baking dish with oil.
  2. Heat oil in a large frying pan over medium heat. Sweat onion, stirring, for 3-4 mins, or until soft. Add ground beef and cook for 3 mins, or until browned. Add tomatoes, tomato paste, 1 cup water and oregano. Bring to a boil, reduce heat and simmer, uncovered, for 20 mins, or until sauce thickens, stirring occasionally. Remove from heat. Let cool for 10 mins.
  3. Meanwhile, combine ricotta, 1/4 cup parmesan and 2 tbsp water. Set aside.
  4. Dip 1 sheet of rice paper in a bowl of warm water to soften. Place in prepared dish, folding edges to fit. Repeat with 2 more sheets, overlapping to cover base evenly. Top with 1/2 of the ground beef mixture then 3 softened sheets of rice paper. Top with 1/3 of the ricotta mixture. Repeat layers, finishing with ricotta mixture. Sprinkle with mozzarella and remaining Parmesan. Bake for 20 mins, or until golden brown and bubbly. Let cool for 15 mins. Serve with mixed greens.
