Chicken Or Turkey Pot Pie
- pie crust (top and bottom) or two 8 or 9-inch pies
- 2/3 c. butter
- 2/3 c. flour
- 1 large onion, chopped
- 1 large garlic clove, minced
- 1/4 tsp. ground black pepper
- 3 1/2 c. chicken or turkey broth
- 4 c. cooked chicken or turkey, cut up
- 1 1/3 c. milk
- salt to taste
- 2 c. frozen mixed vegetables
- 2 c. potatoes, cooked and cubed
- Heat butter over low heat until melted.
- Blend in flour, onion, garlic and pepper.
- Cook over low heat, stirring constantly, until mixture is smooth and bubbly.
- Remove from heat. Stir in broth and milk.
- Heat to boiling, stirring constantly. Boil and stir for 1 minute.
- Stir in chicken and vegetables.
- Pour into crust; top with crust and cut slits in top.
- Bake 30 to 35 minutes at 425u0b0.
- Makes 2 pies.
