Satay Chicken
- 1 1/3 lbs boneless chicken thighs, trimmed, cut into strips
- None None Finely grated zest and juice of 1 lime
- 2/3 cup cilantro, chopped plus more leaves, to serve
- 2 tbsp vegetable oil
- 2 None onions, sliced
- 8 oz jar satay sauce (about 1 cup)
- 1/4 cup water
- 1 bunch broccolini, trimmed, separated
- None None Steamed rice, to serve
- In a large bowl, combine chicken with zest, juice and chopped cilantro.
- Heat oil in a wok on high. Stir-fry onion for 2-3 minutes, until tender. Add chicken and stir-fry for 4-5 minutes, until almost cooked through.
- Add sauce and water to wok. Bring to a simmer and cook, stirring, for 3-4 minutes.
- Toss in broccolini and simmer for 1-2 minutes. Serve with rice, garnished with cilantro leaves.
