Satay Chicken

  1. In a large bowl, combine chicken with zest, juice and chopped cilantro.
  2. Heat oil in a wok on high. Stir-fry onion for 2-3 minutes, until tender. Add chicken and stir-fry for 4-5 minutes, until almost cooked through.
  3. Add sauce and water to wok. Bring to a simmer and cook, stirring, for 3-4 minutes.
  4. Toss in broccolini and simmer for 1-2 minutes. Serve with rice, garnished with cilantro leaves.
