Bacon Gnocchi With Meatballs
- 1 lb ground beef
- 2 tbsp parsley, chopped
- 1 None onion, finely chopped
- 2 tbsp breadcrumbs
- 1 lb potato gnocchi
- 1 bunch spring onions, sliced, bulbs and stems separated
- 2.75 oz bacon, sliced
- 2 tbsp olive oil
- 1 tbsp all-purpose flour
- 1 cup vegetable stock
- 1/3 cup heavy cream
- Mix together the beef, parsley, onion, and breadcrumbs and season to taste. Use hands to shape the mixture into 8 meatballs, and flatten slightly.
- Prepare gnocchi according to package instructions.
- Fry the bacon in a dry frying pan until crisped. Transfer to a plate. Add the oil to the pan and fry the meatballs for 5 minutes on each side or until cooked through. Transfer to a plate and keep warm.
- Add the bulbs of the spring onions to the pan and fry for 1 minute. Blend in the flour. Gradually add the stock, stirring well until no lumps remain. Add the cream and bring to a boil, stirring. Season to taste.
- Stir the drained gnocchi and the bacon into the sauce and transfer to warmed serving plates with the meatballs. Serve sprinkled with the spring onion stems.
