Prosciutto, Fava Bean And Mozzarella Salad
- 12 None thin slices olive sourdough bread
- 2 tbsp plus 1/4 cup extra virgin olive oil
- 1 lb fresh fava beans
- 1 clove garlic, crushed
- 1 tbsp finely chopped fresh mint, plus additional leaves, for garnish
- 2 tbsp finely chopped fresh chives
- 1 tbsp lemon juice
- 12 None thin slices prosciutto
- 6 None mini mozzarella balls, halved
- Preheat the oven to 325u0b0F. Put the bread on a baking pan and brush with 2 tbsp of the olive oil. Bake until crisp.
- Bring a large saucepan of salted water to a boil. Cook fava beans for 3-4 mins. Drain; peel the outer skin from the fava beans.
- Combine garlic, mint, chives, lemon juice and 1/4 cup olive oil in a medium bowl. Season with sea salt and freshly ground black pepper. Add fava beans; toss to combine.
- Arrange prosciutto and mozzarella on a serving plate. Spoon fava bean mixture on the plate. Garnish with additional mint leaves and serve with toasted olive bread.
