Almond Cream Tarts

  1. Place the cream cheese, milk, pudding mix and almond extract in a blender jar.
  2. Cover and process at medium speed until smooth. Pour immediately into tart shells, distributing mixture evenly. Chill for 30 minutes, then top each tart with sliced fruit in decorative patterns.
  3. Brush arranged fruit with the melted apricot jam and serve.
  4. Or keep topped tarts refrigerated until ready to serve.
  5. Yields 6 servings.
