Almond Cream Tarts
- 4 oz. regular or light cream cheese, softened
- 2 c. whole or skim milk
- 1 (4 serving size) pkg. regular or sugar-free vanilla instant pudding and pie filling
- 1/2 tsp. almond extract
- 1 (6 single-serving) pkg. graham cracker tart shells
- assorted sliced fresh fruit for garnish (such as kiwi, berries, bananas, oranges and peaches)
- 3 Tbsp. regular or low sugar apricot or peach jam, melted
- Place the cream cheese, milk, pudding mix and almond extract in a blender jar.
- Cover and process at medium speed until smooth. Pour immediately into tart shells, distributing mixture evenly. Chill for 30 minutes, then top each tart with sliced fruit in decorative patterns.
- Brush arranged fruit with the melted apricot jam and serve.
- Or keep topped tarts refrigerated until ready to serve.
- Yields 6 servings.
