Key Lime Cake
- 1 (16.5 oz) box white cake mix
- 2 cups fresh blueberries
- 3/4 cup cream cheese, at room temperature
- 2/3 cup sweetened condensed milk
- 3 None large limes, zested and juiced
- None None green food coloring
- 1 (16 oz) tub vanilla frosting
- 1 cup fresh strawberries
- 1 cup fresh raspberries
- Preheat oven to 350u0b0F. Grease 3 - 9 inch cake pans. Prepare cake mix according to package instructions. Fold in 1 cup blueberries. Divide batter between pans and bake for 13-15 mins, or until a skewer inserted in the center comes out clean. Let cool.
- Meanwhile, in a mixer, beat cream cheese for 1 min, or until smooth. Add condensed milk, lime zest and 1/2 cup lime juice. Tint to desired color with green food coloring. Beat for 1 min, or until smooth. Chill for 1 hour.
- Spread 1/2 the cream cheese mixture over 1 cake layer. Cover with a second layer. Spread remaining cream cheese mixture over top then cover with third layer. Coat top and sides with frosting. Garnish with berries.
