Beef And Vegetable Pot Pie
- 4 None potatoes, peeled and chopped
- 1/2 cup milk, plus additional, for brushing
- 2 tbsp vegetable or olive oil
- 2 tbsp finely chopped fresh flat-leaf parsley
- 1 lb ground beef
- 1 None onion, chopped
- 1 pkg (16 oz) frozen mixed vegetables, thawed
- 1 pkg (1 oz) onion or brown gravy mix
- 1 sheet frozen puff pastry, thawed
- Preheat the oven to 425u0b0F. Place potatoes in a large saucepan; cover with cold water. Bring to a boil. Boil for 12 mins, or until tender. Drain. Return to pan. Place over low heat. Add milk and 1 tbsp of the oil; mash until smooth. Stir in parsley. Season.
- Meanwhile, grease a 9-inch square baking dish. Heat remaining 1 tbsp oil in a large skillet on high heat. Add ground beef and onion. Cook, stirring to break up lumps, for 5 mins, or until browned. Add vegetables, gravy mix and 1/2 cup water. Cook and stir for 3 mins, or until sauce is thick. Spoon mixture into prepared dish.
- Place pastry sheet over beef mixture to cover. Roll overhanging pastry inwards to form a border around inside edge of dish. Score top of pastry with a small, sharp knife. Brush with additional milk.
- Bake for 12-15 mins, or until browned. Serve pot pie with mashed potato.
